Directions

Crust

1. Preheat oven 350
2. Mix all crust ingredients well; press into bottom and slightly up sides of pan

Filling

1. Beat all filling ingredients well (until smooth and creamy).
2. Pour into lightly greased 10 inch spring form pan and bake for 35 to 40 minutes.
3. Test center with toothpick.
4. If still wet, bake an additional 5-7 minutes or until set.
5. Remove from oven and chill for at least 4 hours

Glaze

1. Mix sugar and cornstarch in sauce pan.
2. Stir in cherry juice and simmer over medium heat, stirring constantly until boiling.
3. Simmer 2minutes (while continuing to stir).
4. Remove from heat and cool for 5-10 minutes.
5. Add a few drops food coloring.
6. Spread the cherries evenly over the chilled cheesecake.
7. Pour glaze over and chill until ready to serve.
