Potato Salad Vinaigrette

Directions

1. Wash potatoes and boil until done, but still firm.
2. Allow to cool and add the sliced green onion.
3. In a separate container, mix the vinegar and mustard and add salt and pepper to taste.
4. Gradually whisk in the olive oil to create an emulsion.
5. Add more oil if necessary to achieve the desired consistency.
6. Toss the potatoes in the vinaigrette, cover and chill.
